Millie’s Italian Red Peppers
A wonderful combination of baked red peppers, parsley,
garlic, bread crumbs and red wine vinegar, this is absolutely delicious served warm
with slices of Provolone cheese and Italian Bread.
Ingredients:
12 Red Peppers Cleaned and Thinly Sliced
1 1/2-
10 cloves Finely Chopped Garlic
Salt and Pepper
½ tsp Red Pepper Flakes
1cup Italian Parsley (fresh) or ½ cup dried
Red Wine Vinegar
Method:
Mix all ingredients together. Cover with foil and put into a 400 degree oven for
60 minutes stirring every 20 minutes.
After an hour remove foil and sprinkle red
wine vinegar and leave in the oven for 10 more minutes or until peppers start to
darken.
Serve warm or at room temperature. Taste better if prepared a day before!
Serve with slices of provolone cheese and Italian bread.
