Potato
Pancakes
3 cups
Finely ground potato
1-1/2 T all-purpose flour
1/8 tsp baking powder
1/2 tsp salt
2 Eggs
½ tsp Grated onion (or to taste)
Combine all ingredients. On heated griddle, melt butter, or use a spray such as Pam, to oil griddle. Spoon mixture onto griddle into pancake sizes you prefer, and fry until golden brown on both sides.
Top with your favorite Myrtle Creek Jam and add a dollop of yogurt.
